Vegan Beauty Power Loaded Nachos are here! These vegan nachos are loaded with protein and flavor. They’re quick and easy to make, and are perfect for any time.
I didn’t want these to be some regular, typical, plain vegan nachos. So, I loaded them up with so much yummy goodness! Make these a meal having more servings at a time or have one serving as a snack if you want. Either way, if you love nachos, try this version!
Here are the ingredients you’ll need to make Vegan Beauty Power Loaded Nachos (makes 4 servings):
Tortilla chips (1 bag)
Pico de Gallo (1 cup)
Soy crumbles (1 cup)
Vegan cheese shreds (1 bag)
Black beans (1 can)
Edamame (1 cup)
1 red bell pepper (chopped)
Lettuce (1 cup) (I used green leaf lettuce. Any kind of lettuce will work well.)
Himalayan sea salt (1/2 tsp)
Smoked paprika (1 tsp)
Fresh lemon juice (half of a lemon or 1 small lemon) (Lemon instead of lime. Trust me on this.)
Cherry tomatoes, cut in half (8-10)
1/2 of a Sweet onion, white onion, or yellow onion (cut into thin strips)
Here’s how to make Vegan Beauty Power Loaded Nachos:
1.) Preheat oven to 400 degrees.
2.) Chop up the red bell pepper. Cut the onion into thin strips. Cut the cherry tomatoes in half.
3.) Put tortilla chips (not on top of each other) on a baking sheet lined with parchment paper.
4.) Top the tortilla chips with vegan cheese shreds.
5.) Add the black beans, chopped red bell pepper, edamame, soy crumbles, onion strips, and pico de gallo to the tortilla chips and vegan cheese shreds.
6.) Sprinkle with Himalayan sea salt, smoked paprika, and fresh lemon juice sqeezed from a lemon.
7.) Bake at 400 degrees for 10 minutes.
8.) Let cool for a few minutes.
9.) Add more fresh lemon juice if you want.
10.) Top with lettuce and cherry tomatoes.
11.) Store in refrigerator. These can be reheated later if you want.
